  • Pulled pork. Can it be done in a pot?

    I typically do a big pork butt with a lime/cilantro rub in a smoker and then use it for pulled pork sandwiches, and cuban sandwiches, and chili.

    Friends convinced me to enter a chili contest since they liked it alot. Well the rules specify cooking must be done on premises within 4hours, and with stainless pots/pans on propane burners.

    Is there a way I can get the pork cooked this way? I'm not concerned about flavor as the chili recipe will cover that. I am more focussed on texture and moistness.

    I was thinking cutting the pork into smaller chunks, and cooking it in some kind of liquid (like a slow cooker) for like 2-3 hours leaving me with 1-2 hours to shred it and add to the chili.

    Advice?
