Tae kwon do....Jui Jitsu......or....Okinawan Karate ???
I am 42 years young.....slightly out of shape ( not too bad for a Grand Ma ).......and in need of toning, focus.....and enlightenment.
Which should I begin with....and why?

Martial Arts are a perfect choice for what you are looking for. As a personal preference I would recommend Okinawan Karate. I took two years of Tae Kwon Do. It involves a lot of high kicks and back kicks and forms that I really didn't find useful outside of the tournaments. Jui Jitsu is like Judo, actually Judo is like Jui Jitsu. It involves a lot of rolling around trying to bring down your oponent, it is basically focused on throwing techniques. Again, in my personal opinion, it is very useful but maybe not what you are looking for. Okinawan Karate is a more rounded martial art.

I have studied the Okinawan karate of Uechi-ryu and have found this type of karate very helpful to me and not only in learning to defend myself but gaining more self confidence in almost any thing I do because in karate ,which means open hand, you must use your mind as well as your body to deal with the situations you may encounter.

None of the above. They are all fairly useless. Well, actually I don't know much about Jui Jutsu. But the other two are crap. A school can't be good if you can find a teacher on every corner and can churn out black belts in two years.

jiujitsu has a lot of joint and neck manipulation. Karate would be the best bet.
