What other vegetables or food in general can be pickled?

I've had pickled eggs, okra, asparagus, and green beans. What else can be pickled? Have you tried it and did you like it?

Last year I made pickles from the veggies in my garden.
I used cucumbers, green tomatoes , tiny summer squash,
green beans, sm onions. hot peppers. The pickles were great. And I tried pickling chopped cabbage with a couple pods of hot pepper. It was like Sour Kraut , but much better.
That's the only time I've tried cabbage, But I'll do it again.

You can pickle watermelon rinds, vegetables (mixed) they are usually pickled and added with hot peppers. You can pickle corn, beets.Looking at the Ball home cookbook for preserving foods and here goes with different things to pickle; plums,dilly peach pickles,cantaloupe pickles,pickled pinnapples, sweet pumpkin pickles,chunky mustard pickles,lemon cucumber pickles, pickled 3 bean salad, dilled carrots vietnamese carrot and daikon pickles, pickled garlic,aubergine pickles, marrow 'n' onion mustard pickles, red onions in vinegar, pickled roasted red peppers, pickled hot peppers, dilled green tomatoes, summer squash pickles, jardiniere, end of garden pickles, azny zucchini pickles, pear pickles, cinnamon watermelon rind, spiced red cabbage, pickled onions, sauerkraut,...

There are many variations of each. You should check the library to see if you can get this book and make some copies of the receipes.

Pickling can be an all day process. But it is well worth the extra efforts you put into it and they last forever. Enjoy. I've tried almost all of these and I love them. Even better if I have made them myself.

Korean food is spicy, but in a different way. I lived there for a year. I could eat some pretty hot stuff in Korea. When I came back, I got some Mexican food. It was only medium, but I thought I would DIE the first time I tried to chow down. Now I'm back up to my normal levels. You should try it some time. It's quite different from Mexican in every way, so don't expect it to be the same. Kimchi can be hard to get used to for some people.

Pickled Onions.
Both brown and white onions are great pickled, and go well with pickled pork.
