Roasted Red Potatoes~
Ingredients 2 pounds small red potatoes, scrubbed and cut in half (do not peel) 3 tablespoons olive oil, more if desired
SEASONINGS TO TASTE: Garlic salt Fresh ground pepper Salt Dried rosemary, crushed (for pork ribs you can use Sage) Dried parsley Dried or fresh minced garlic
Use a Large Baking pan, line with aluminum foil and coat in cooking spray.
Directions Preheat oven to 425ºF. Fill large bowl with cut potatoes. Drizzle oil and seasonings over potatoes, stir to coat. Place potatoes in a single layer on prepared baking sheet. Bake uncovered 40 to 45 minutes, turning half way through baking time. Potatoes should be a light golden brown and tender. Serve warm.
**Try adding a little Parmesan when you take them out of the Oven.
1/2 pounds small new red potatoes (about 15), scrubbed and dried 1/4 cup extra-virgin olive oil 4 to 6 cloves garlic, crushed 1 tablespoon fresh or 1 teaspoon dried rosemary
Preheat the oven to 350 degrees F. Pare a narrow strip of peel from the middle of each potato. In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled and served with fried chicken or ham.
