Hey guys, there's something wrong with my chicken when I cook em. It starts getting watery and foamy, I usually do stir-frys with onions, garlic, tomatoes and other spices. So.. is there something wrong with the way I'm preparing the meat or is there something wrong with the meat itself..? I've tried buying from different places, but it's always like that.. it gets watery and foamy.. Any help would be appreciated, thank you!

Right from the freezer, but I thaw it out first.. so, is that the problem..?

Yep.. That's the problem... If you're going to cook frozen chicken, put it in a curry or something like that for just this reason...
Always use fresh for stir-fry and things of that nature...
The problem is, unscrupulous dealers (most supermarkets) saturate their chicken in water before they freeze it so that they can legally claim a higher pre-frozen weight. Only thin is, if you cook it quick and hot, the water 'foams' out of it (effectively, what is happening is that the water tries to leave the meat that quickly that it virtually sprays out...) Making the meat go dry and mushy.
If you must buy frozen... Pay a little more for the premium grade stuff

They may be selling you frozen-and-thawed chicken for fresh (it happens in the big supermarkets).
Also, the chickens may have been fed salty feed before being slaughtered. This makes them drink a lot of water which passes into their tissues so they weigh more at slaughter. This used to be done with cattle, and probably still is in some places.
I would buy chicken in a different shop for awhile and see if there's a difference.
