So what is the Monster in Cloverfield?

I figured it out. Let see if You did.
If You did then you also know...
Why did it take off the statue of Liberty's head?

Since it's from the victim's point of view You can't rely on what they said. Just on What You see in the movie.
1) It's skin color was the same as the Statue.
2) The babies were SPIDERS.
3) It was pretty "fat" at the beginning, but skinny at the end (still HUGE, but thin).

It's a Wolf Spider "Upgraded" for Sci-fi & Space travel of course... Check out the photos of the babies (look familiar?)

It sees the Statue, same color & size, thinks "Another of Me!" and attacks it, taking the head off.
It sees tiny things (People) on the other island (Manhattan), about the size & color if It's own babies, thinks "My babies can eat those babies now that the big one is dead" and starts dropping it's babies for lunch time...
CLASSIC Horror!

Apparently it was something living in the deepest part of the ocean that was awakened by deep sea drilling and/or a falling satellite. It gained it's size and strength from consuming some mysterious substance down there. I don't know if there is a specific reason why it attacked the statue other than just lashing out.

Edit: It had grey skin, not green.

It took off the statue of liberty's head to pay respect to the movie "escape from New York" (1981)

I know I've seen that type of monster in another movie, just can't place which one. I was thinking "Pans Labyrinth" but still not sure. If anyone knows, please tell me....it's driving me crazy.
