Olives are used as a garnish, but also impart flavor to a drink that is composed purely of booze. Even just putting one or two olives into a gin martini will change the flavor slightly. A variation of the martini called a Gibson uses a small white onion as a garnish, which also alters the flavor a bit.

i'm thinking it has something to do w/the saltiness...at least for martinis...that goes well w/alcohol. Just can't imagine a martini w/a cherry tomato in the bottom! LOL
