I will be graduating in May. There is a job doing exactly what I want to do open right now with a good company?

Should I go ahead and apply now and just tell them I'm not available until May? Any help is appreciated.

You should apply now and accept the job on the terms under which they will offer it to you. I started my "real" job three months before I graduated and I just had to make the best of it. I was fortunate that my senior year was mostly work on my undergraduate thesis and not classroom time. Getting a jump on the job market, particularly in this market is highly advised. Accept that you will be on their terms and not your own. The market is tremendously competitive and you're up against people who can start immediately.
