Most potato farmers nowadays who supply potatoes they grow to various food and snack companies such as potato chip companies, use machines to pick and package their goods. Odds are that sometimes a baby spud might get caught up in this process. The people at the potato chip plant also use machines therefore may not always spot the baby amongst all the grown up potatoes. It gets into the mix, gets sliced, fried, and bagged with all the rest. I am surprised about how many wrong answers you have received. If a potato chip is green it is because it has been exposed to sunlight while it was growing, or over a prolonged period after being picked. I wouldn't worry and just eat the chip, but in actuality it does mean that there has been a build up of toxins in the potato, if you ate a lot of green potatoes it could be quite bad for you. Google it some more if you want, but this the correct answer. And really, you can buy baby or 'new' potatoes, which are small potatoes that would have kept growing, and they aren't green, potatoes aren't green for any other reason, unless I suppose if you dyed them....Show more

Occasionally there will be chips with a Light Green color tint to them... This is nothing to worry about as these chips are cut from young immature (or green) potatoes which are usually full size but green around the edges... Unless your chip was fuzzy or tasted funny, you will be fine......Show more

It was test chip they dye green to find it to test the cooking time in the fryer. They are not suppose to be put in bags. It was obviously missed...Show more
