I brought a bunch of fresh Asparagus today, now what?

do I do with them to keep them fresh until I cook them on Thursday? I want to do a asparagus and fresh spinach bake/casserole. If you have a special recipe for fresh asparagus & fresh spinach bake/casserole, please share. I have a recipe, but you might have a better one. Please and Thank You!

sauteed asparagus is pretty darn good. I don't have a recipe per se, but I just steam or boil them until they are a tad bit tender, then sautee them up with some butter or olive oil with chopped garlic and season to taste. that will turn a veggie hater around :)

you can do the same with green beans and broccolini. my favorite is with broccolini because the florets absorb a lot of the seasonings and buttery flavor.

serve it up with a rare filet mignon and you have yourself a nice gourmet entree :)

Darling, by my reckoning, today is FRIDAY, therefore, you are going to have to store them for a week.

A better idea would be to soak them in cold water to remove the sand, then simmer them in salted water until they are tender. It's not even necessary to peel the stems like you see haughty TV food chefs doing. When they are tender, drain and dress with butter. The end result is ambrosial, and as an added bonus, your pee will have a unique, albeit not unpleasant odor due to some chemical in the plant.

As for your casserole on Thursday, buy your Asparagus the before or the day of. I'm not saying that there aren't a lot of recipes for Asparagus/Spinach Casseroles, I'm sure someone will post one, but it sounds a little strange considering the amount of water the asparagus will release, covered in an oven, and it's impact on the spinach. I'm just saying.....
