Actually you are right, it does not mention anywhere that he is not an egg! And not many people have noticed that! Cheers!

The original poem was a riddle, and "an egg" was the answer (riddles used to be a little different back then). The riddle was very well known -
So when Lewis Carroll decided to put the character in his book "Alice's Adventures in Wonderland", the man who was illustrating the book just naturally drew him that way - since he knew the famous riddle.
Time went by, and the book and the rhyme endured, but the riddle aspect was forgotten.

In the original "Alice Through The Looking Glass" story, from where the rhyme is from, he was illustrated as an egg.
