okay i tunes said i need an update on my ipod but i cant update it successfully?

Hi i have an ipod touch 8GB... Okay i try to restore my ipod and that worked but the only problem i am having is itunes wont let me use my ipod or recognize it. It keep saying you need to download a newer version of itunes. I also tried to erase everything on my ipod and it still not showing up as my ipod on itunes. and on my ipod screen its still showing up as restore. So could someone please help me and i also tried spirit but it said it cant help me jailbreak my ipod so it would be really nice if someone can help my situation please and thank you.
