there are things I want to create with Gimp or PS, but I'm having trouble. I would like to find a starting point to learn about how to mimic life on paper or digital ( such as making things have depth ). Any help or links would be great.

I was the youngest girl in Australia (three years old) in the 90's to draw and recognize 3D drawings. I was a fantastic little artist. I had people offer to buy my work and frame it. (wish I was still that talented).
Art didn't just come to me like that, I learned how to draw by observing things. I started drawing dinosaurs really good by pausing the video of Jurassic Park and studying the way the dinosaurs looked. From there I was able to draw just about any thing.
It all comes from observation and practice, the more you practise the better you will get.Some days you can trace other pictures, other days free hand from looking at a picture.
Drawing isn't always something someone is born with. I have actaully forgotten how to draw a lot of the things I used to because It's been so long.
As for digital drawing, the best way is to download Illustrator, much better than the other paint programs unless there is a cheaper version of Illustrator. Look up free illustrator download from adobe (on Google search) and download the 30 day trial. A lot of the techniques on illustrator are hard to learn, but the basic drawing and colouring is easy. Of course drawing on a computer is much harder than doing it by hand (my opinion).
I fully trust the earlier poster. There's no means viable to attract in Photoshop (or any photos software that I recognise of) with a mouse. You desire to take a look at to ULTIMATE TEST? Try modifying a image in Photoshop utilising a computer's touchpad! LOL! It's unattainable!
