Bought girlfriend a ninja 250 she is not using it, has dropped it twice at slow stops,?
Now has confidence issues. She was initially interested in a Can-Am, so do I hold out? Cave in and buy the high dollar Can-Am, give it all up? If I get her on a Can-Am will she ever gain confidence or will I ever get her back on a two wheeled bike? (group biking without the girlfriend)

You should spent the $ and sent her through an MSF Basic RiderCourse which would have probably had a Ninja 250 as a trainer so she could make any mistakes off road in a non-threatening environment. As of now your choice is to send her to the Basic RiderCourse or better yet to the MSF 3 Wheel RiderCourse. Many programs offer loaners of Can-Am's for the 3 wheel course so she would be able to 'try before buying' - much cheaper option than shelling out the big bucks for a ride she may not like.
I definitely agree that you need to get her into the MSF course. I'm brand new at riding also, and when I first bought my ninja 250 a month ago, I dropped it on the first day I had it. I also swerved to avoid a car, and because of that I jumped a curb and had to lay down the bike. It ended up destroying both of my wheels, but thanks to the frame sliders the only other things wrong were the broken mirror, and the bent gear shift. But just like your gf, I have had confidence issues since that. I was afraid to even get back on. Then I took the MSF course, and I felt better. Yes I'm still nervous about it, but actually learning about it helped a lot. I'd sign her up.
