How many paragraphs does it have to be? Or is it judged by pages only, with as many body paragraphs as you want?

MORE INFO.

But, um, if it's 5 paragraph like 90% of my essays are then, obv, first paragraph is your intro/thesis statement - for that, idk, you could just state that the point of the paper is to show that passive and active prejudices are harmful, even if one is passive? Something like that would be interesting.

I'd choose racial prejudice simply because I want to and it'd be easier to find stuff on that. Just choose what you want to do and stick with that - don't jump over a whole bunch of topics, unless you're sure you can handle that and still touch on what you want to touch on. If you do want to choose more than one type of prejudice, it could make for a pretty cool and dynamic paper, I think but anyway.

1ST PARAGRAPH: simply introduce the topic and your thesis statement, my idea being that all types of prejudice, including active and passive, are harmful; you can also expand that to talk about seemingly innocent acts of prejudice.

2ND PARAGRAPH: I'd start with a brief history of the type of prejudice I'm focusing on (it's less work if you just want to combine all the prejudices PLUS a more dynamic paper) and then go into the general thoughts of that type of prejudice - do people think it still exists, or that it has gone away, or something and you know, just go on about that.

3RD PARAGRAPH: Um. And here is where I stop, because, tbh, your paper has to flow, and I don't even know what topic you're on so, yeah.

Good luck.

you should really try doing this on your own, knowing how to organize, and write your essay is one thing you can take out of school! You're going to need to know how to do these on your own!
