why does it happen????????

Take a plate and fill it with water
add black pepper in it and let it float
then take some detergin liquid in hand
put the finger in the plate only one drop
the pepper runs away from your finger...
why??

The detergent molecules have both polar and non-polar ends. So the lowest energy arrangement for them is to have the polar end in the (polar) water, and the non-polar ends not next to water.

The easiest way to do that is for all the detergent molecules to be on the surface of the water. The polar heads are in the water and the non-polar tails are outside. As the molecules occupy this position, they shove the surface of the water away, excluding the floating particles.
