Weeks and weeks. Until you find the mold spots on top when you take off the lid. (Chances are you won't discover this until you actually need it and it's too late.) That's what happens to me.

As per Alton Brown put barely molten bacon grease in an "old school" aluminum
ice cube tray that you keep for this purpose and freeze it into cubes, and put those
frozen cubes into a ziplock bag.
Now you have nice pre-measured chunks of grease.

you mean bacon grease? uh i dont keep mine in the fridge but it doesnt get old or anything

I do keep mine in the frig and it keps indefinately.. Good stuff to have around for flavor in beans and what not.
