What are some healthy concession stand ideas?

I work in an indoor concession stand at a gymnastics complex and am given the task of getting new and unique ideas to boost sales. i need ideas that are affordable and also don't have to be cooked just warmed or heated and put together. Please and thanks you i could really use the help.

Healthy smoothies in great flavors: Fruit or Yogurt with Fruit or Protein.

Vegetable Tray: A small plate of: Celery and Carrot sticks, black olives, Wheat Crackers and a few slices of cheese.

Hummus Tray: Hummus with Red Peppers, Celery and Carrot Sticks for dipping with Crackers.

Yogurt Cup: Vanilla Bean Yogurt sprinkled with granola and fresh fruit.

Yogurt Split: Vanilla Bean Yogurt, with a banana slices, pineapple, strawberries and shavings of really good quality dark chocolate and maybe sprinkled with granola.

Pita Pockets: Offer a variety of choices. Veggie. Meat. Cheese. Combo. You can use Hummus as the spread. Some selections can be heated, others served cold.

Health Food Salad: Chop red and green peppers, celery, carrots, cucumbers (seeds removed), tomatoes, red onions, green scallions and fresh ground pepper. Mix together and add either a vinaigrette splash just to moisten or perhaps a light yogurt blue cheese dressing, used sparingly.
Create your own vinaigrette with raspberry vinegar and maybe lemon olive oil.

Soup. Cabbage soup. Veggie soup. Fish chowder.

All BEEF hot dogs. Hot ham and swiss on five grain bread. Smoked turkey sandwiches. Create a great sandwich spread out of some mayo, a little stone ground mustard and basil.

Mix your own Signature herbal salt and use a pepper grinder to sprinkle it on the food: Use kosher salt, a very small amount of hot pepper flakes, peppercorns, dried minced garlic, dried parsley and rosemary.....or what have you?

The trick into getting people coming back for more is to give them something they cannot easily duplicate so they will crave it when they are at the complex.

How about looking for some recipes for raw vegan "cookies"...the kind that provide natural energy from fruits and nuts or seeds? I once had these awesome date and coconut rolls-nothing but ground up dates and shredded coconut.
