What regnal name will Prince Charles take?
Will he be known as Charles III or will he as previously speculated be George VII? Does the fact that William and Kate's son is George make Charles III more likely as he wont want to upstage him?

I think he will choose to be George VII because he has previously said he would. That means, I think, that the new Prince George will become known by one of his other names - probably Alexander - and may well choose that as a regnal name.

Naming the new little prince "George" won't prevent Prince Charles from adopting "George" as his regnal name. William V will just come between George VII and George VIII. After all, George I, II, III, and IV followed on the heels of each other and George V and George VI were only separated by Edward VIII.

I think calling the new baby George is very significant. Yes, Charles was known to be considering becoming George as King. How that will be now is interesting. Is this perhaps a clue to the fact he won't ever be crowned and will now stand aside in favour of William, meaning their new son will be George VII and not Charles. Although of course, the new baby could decide not to be King George!!! King Alexander would be a new one!
ps I have money on the fact he will be King, the moment the Queen dies, but will never be crowned.

Most do change their name - Albert became Edward VII, David became Edward VIII, Bertie became George VI.
Historically we had four Georges in a row - followed by a William.
If he takes George VII as a tribute to the Queen's regard for her father, then his son could be William V and the new one could be George VIII.
King Arthur sounds unlikely - and Philip is too much like the catholic King Philip II - the husband of Mary I, and King Charles sounds too much like a breed of dog to be credible, nothwithstanding the poor associations with the name.
More to the point - what is Milly going to call herself.

Who knows? He himself has remarked in the past on the speculation and said forget it, he'll tell us when he becomes king. The only reason there's any argument at all is that the previous two King Charleses weren't exactly shining examples - one caused the English Civil War and the other is most famous for his mistresses. He might choose to "rehabilitate" Charles. After all, that's what we've all known him as for the last 64 years.
The last time any monarch didn't use their own first name as their regnal name was when Prince "Bertie" decided to be George VI, and that was for a very specific reason, to emphasise continuity with his much-loved father after the abdication crisis. Back further and Albert Edward decided to be Edward VII partly as rebellion against his mother's obsession with the name Albert (if anyone was ever a control freak, it was Queen Victoria), though of course it doesn't say that in the official announcement http://www.london-gazette.co.uk/issues/27270/supplements/547 Queen Victoria didn't use her first name simply because her second name of Victoria was always what she had been called. Go back further and you find that monarchs not using their given name is actually quite rare.
