I love a baked macaroni and cheese side with this. Choose a recipe that has a few different cheeses for a bright contrast in flavor to the chicken. But I also like a corn hash which is made with corn kernels, roasted chopped red peppers and onions and there are many variations on this. At this time of year, zucchini is in season and diced and sautéed in a pan with butter and herbs is the healthiest way to go.

Serve a potato side dish of some kind. You have many options including pierogies, garlic roasted baby potatoes, loaded baked potato skins, or baked fries. I also love parmesan mashed potatoes for a quick side. A pasta of some kind would great too. Have macaroni and cheese or alfredo noodles. Broccoli, rice, and cheese casserole is a family favorite that you could make too. My last suggestion would be a pasta toss with olive oil dressing and assorted steamed vegetables. Deli lunch meat and cheese goes great in pasta tosses as well. It's just like a warm pasta salad.

This is one of my favorite salad recipes... Caesar Coleslaw 1 pkg pre-made coleslaw 1/4-1/2 cup shredded parmesean cheese 1/2 pkg caesar croutons 1 bottle creamy caesar dressing Toss first three ingredients together. Add enough dressing to coat. It's even good the next day! Also this creamed corn recipe is wonderful and I always love mashed potatoes... Fancy Creamed Corn ½ pound bacon, chopped 16 oz frozen sweet corn, thawed 1 cup whipping cream of half and half 1 Tbsp Cornstarch Salt and pepper to taste Cook bacon until crisp. Add corn and stir for 5 minutes. Mix half and half with cornstarch. Add cornstarch mixture, salt and pepper. Stir until thick and bubbly. Mashed potatoes Cut, cube and boil 5 pounds russet potatoes until the biggest cube you can find breaks apart when you put a fork through it. Drain. Use a whole cube of real butter and just enough light cream to make them fluffy. Mash with a hand mixer until there are no lumps. Be patient, this may take a while. yummy! Hope this helps!
