I love a baked macaroni and cheese side with this. Choose a recipe that has a few different cheeses for a bright contrast in flavor to the chicken. But I also like a corn hash which is made with corn kernels, roasted chopped red peppers and onions and there are many variations on this. At this time of year, zucchini is in season and diced and sautéed in a pan with butter and herbs is the healthiest way to go.

Serve a potato side dish of some kind. You have many options including pierogies, garlic roasted baby potatoes, loaded baked potato skins, or baked fries. I also love parmesan mashed potatoes for a quick side. A pasta of some kind would great too. Have macaroni and cheese or alfredo noodles. Broccoli, rice, and cheese casserole is a family favorite that you could make too. My last suggestion would be a pasta toss with olive oil dressing and assorted steamed vegetables. Deli lunch meat and cheese goes great in pasta tosses as well. It's just like a warm pasta salad.

This is one of my favorite salad recipes... Caesar Coleslaw 1 pkg pre-made coleslaw 1/4-1/2 cup shredded parmesean cheese 1/2 pkg caesar croutons 1 bottle creamy caesar dressing Toss first three ingredients together. Add enough dressing to coat. It's even good the next day! Also this creamed corn recipe is wonderful and I always love mashed potatoes... Fancy Creamed Corn ½ pound bacon, chopped 16 oz frozen sweet corn, thawed 1 cup whipping cream of half and half 1 Tbsp Cornstarch Salt and pepper to taste Cook bacon until crisp. Add corn and stir for 5 minutes. Mix half and half with cornstarch. Add cornstarch mixture, salt and pepper. Stir until thick and bubbly. Mashed potatoes Cut, cube and boil 5 pounds russet potatoes until the biggest cube you can find breaks apart when you put a fork through it. Drain. Use a whole cube of real butter and just enough light cream to make them fluffy. Mash with a hand mixer until there are no lumps. Be patient, this may take a while. yummy! Hope this helps!

Macaroni and Cheese, buy it frozen or make your own. Baked Sweet Potato fries would be great too.
For the Sweet Potato Fries
Yield: 4 servings
2 Medium Sweet Potatoes
1 tablespoon vegetable or canola oil
1 teaspoon ground cinnamon
Salt & Pepper to taste
Preheat oven to 375 degrees F
Rinse potatoes well under cool water. Scrub dry with paper towels.
Cut the potatoes in 6-8 wedges or more, depending on size. They should look like Steak Fries
Toss the sweet potatoes with the oil and salt & pepper to taste
Place the sweet potato wedges on a baking tray or cookie sheet and bake for 30-40 minutes in the preheated oven. The sweet potato fries are done when the outside is lightly crisp and the inside is tender. Remove from oven and sprinkle on the Cinnamon. Serve immediately.

Edit: Mac & Cheese: Stouffers make a good frozen Mac & Cheese or you can use one of the Kraft Boxed Mac & Cheeses. To make it look more home made, pour the cooked boxed Mac & Cheese in a casserole dish, top with bread crumbs and put under the broiler for a few seconds.
This is my quick homemade Mac & Cheese recipe
Quick Mac & Cheese
Macaroni & Cheese
½ lb (about ½ the box) dried pasta (macaroni) of choice, uncooked (I use short penne or elbows)
1 8 oz. package shredded mixed cheese (Kraft 3 cheese mix or triple cheddar with a touch of Philadelphia is good or any packaged shredded (not grated) cheese mix is good
1 cup whole milk
½ teaspoon kosher salt, or to taste
¼ teaspoon Chipotle chili powder or a few drops hot sauce, optional
Salt & Pepper to taste
Optional Topping
1/2 cup seasoned bread crumbs
2-3 tablespoons grated parmigiana cheese
1 teaspoon olive oil or any oil
1.Place pasta, cheese, milk, salt, pepper and chipotle chili powder or hot sauce, if using, into a microwave safe bowl. Stir to mix. Cover lightly with plastic wrap and microwave for 3 minutes. Stir and microwave for an additional 2-3 minutes, until pasta is cooked to your liking. Stir until creamy and smooth. Add a little more milk if needed. Serve immediately or pour into an ovenproof casserole dish, top with optional bread crumb topping or crushed potato chips or crushed corn chips and put under the broiler for a few seconds.
For the Optional Topping
Mix the bread crumbs, parmigiana cheese and oil together. Sprinkle or spread over the the mac and cheese and put under the broiler for a 15-30 seconds.
