You can, but the thighs may cook up a bit oilier as they are the dark meat and tend to be oilier than white. Perfectly good substitution tho.

Sure
Matter of fact, there are many restaurants who do this for a couple of reasons such as the difficulty of purchasing the small chickens used for breast sandwiches these days.

The thighs are more flavorful-just watch for the inherent bone the manufacturer missed.

Dark verse white, dark for me, has more flavor and such but it also has a higher fat content. I can't eat it.

Yes. I have many times. In fact, they work better because they're the right size to fit a regular hamburger bun. Chicken breasts are often too large, or then too small if cut in half. I also prefer using thighs because dark meat is moister. You have a far less chance of having a dry sandwich using boneless, skinless thighs than you have using boneless, skinless breasts.

Soitenly. You can use the chicken neck if you take out the bones. The closer the bone the sweeter the meat.

Yes; chicken is chicken.
Thighs generally taste better, but don't have the white meat (ie less pretty)
