What ingrediants do Japanese cheifs use to make their rice taste so good?

I was recently at a Japanese restaurant at the Hibachi bar where it was made right in front of me. All that was put onto the rice was a brown-black liquid which only slightly gave it color, but I'm guessing that's what made it so delicious. What kind of rice do they use too?

The chef served you a sort of fried rice, right?

1. Soy sauce only
2. Soy sauce and sesame oil
3. A bit tricky, but when the restaurant offers you Okonomiyaki, the sauce might be Japanese Worcester sauce

Just ask him/her which brand of soy sauce they use next time.

Many Asian people love to stir-fry rice with long-grain rice, but in Japan we usually use short grain, so-called sushi rice, from sushi to fried rice at home.
