How can I store fresh vegetables for a long period of time?

I want to set organic, but the store is far away so I can take a trip once a month maybe. How can I keep fresh fruits and vegetables eatible that long?

I always keep them cool and moist. Like lettuce I put in a sealed container with a damp paper towel then store it in the fridge. Same with carrots celery etc..... I hope this helps
