It depends on what email network you are on.
For AOL: There is an underline button in the ribbon (tool bar at top)
For Yahoo: There is an underline button in the ribbon (tool bar at top)
For Gmail: There is an underline button in the ribbon (tool bar at top)
Other providers: Please specify, but are generally the same
If this doesn't help, this is what I recommend doing:
1.) Cut the statement you wish to underline (Ctrl+x or right-click->cut)
2.) Open up a program that allows you to type (Word, Pages, Google Docs, etc.)
3.) Paste the statement into a blank document (Ctrl+v or right-click->paste)
4.) Highlight the statement
5.) Select the Underline option on the ribbon (top tool bar) or (Ctrl+u)
Now the statement is underlined
6.) Copy the underlined statement (Ctrl+c or right-click->copy)
7.) Open the email you need to edit
8.) Paste the statement where needed ((Ctrl+v or right-click->paste)
