Increase the fat, sugar, or booze content. An egg custard makes softer ice cream than without. More cream softer than half and half, a couple tbsp of alcohol softer than none. And sugar.

What I do is put it in the freezer until it's rock hard and then put it in the refrigerator to let it slowly melt, after about 20-60 mins it's the texture from ice cream in stores.

Store it in the fridge freezer. those are never as cold as chest freezers are.
