Organizations buy lists of people who have already been vetted. That way they know there is a cross section of people they want to ask. They can ask for race in equal proportion or match the percentage in a specific community, same with age. and other factors. If you are polling an area in the deep south versus the north you might want different people polled. If you want a nationwide poll you want it to mach the national demographic. Once you answer one pol, you usually end up answering lots of them.
