I am looking to buy a bike I'm 5'8 with short legs (inseam on pants 29-30inch) I'm lost on this whole finding the right bike to fit me the best, anyone know the best tricks or what size bike would be best for me or know the logic on what size bike based off height etc is? Ps. I'm a man.

Going to a reputable bicycle shop for a fitting is the best thing to do. This frame size calculator can get you in the general area of what you need.

There is no guaranteed answer to size except to get on any bike and ride it before (BEFORE) you buy it.

You didn't supply enough info about the type of riding you'll be doing to come up with an answer. Maybe a tricycle?
Go to all the bike shops in your area. Start test riding a few.

I'll assume you're talking about bicycles & not motorcycles. The "best bike" fits your riding style and fits you physically - the right frame size. So..."Where & How" will you be riding? Strictly on paved surfaces? Strictly off-road? A little of both?
What size bike? I've got some bad news for ya... Frame sizing is NOT universal from one company to the next in the bicycle industry. From company 'A' you might fit nicely on a 17" frame size hybrid bike. From company 'B', you might require a 15" frame size. And road bikes are even more critical because they usually are spaced apart only 2 to 3 mm not inches. So how do you find out? Five, simple, easy-to-understand words...

...or shops. Test rides are FREE. Test ride at least 2 to 3 bikes from (hopefully) more than one bike shop. Would you buy a car without a test ride? But unlike the auto industry, bike shop mechanics & salespeople do NOT work on commission. Do NOT get in a rush. Don't buy the first piece of eye candy you see. Buy what you NEED - not want.
Whatever you do...newbies should AVOID both internet sales & discount stores. Discount store bikes are plain & simple JUNK. With internet sales... 1) You have to assemble & tune-up the bike. 2) There is no "service warranty". Once you sign for that box, it's yours - good, bad or otherwise.
I could leave links to several bicycle sizing charts. They're all USELESS. Why? Because as previously explained, frame sizing isn't universal. Charts & guidelines are just that - guidelines only - not FACT. Finally...I am NOT specifically recommending the Giant brand name.
