Don't eat them?
They are mostly packaged water, so if you are worried about nutrients take a supplement. If you have grains and cereal, fortified breads and so forth, you will be fine for fibre.
You can get things like pasta made of vegetables, or find imaginative ways of cooking them - eg veg curries.
