Your body would go into a state of ketosis where it would burn ketones instead of glucose for fuel. This is the premise behind a keto diet. You might lose weight, you might not depending on your caloric intake. Many people are very healthy and happy getting rid of most carbs especially grains, starches, and sugars. If you never ate vegetables, you would probably become constipated and would eventually develop some nutritional deficits.

You'd get sick. Your brain needs carbs, so that would be a big issue in itself.

You would initially lose weight. Then you would be extremely tired. Then you may not have the energy to get up. Then your body may not have the energy to survive.

Carbs are in nearly everything you eat. Cutting out processed carbs isn’t a bad thing, but natural carbs are not your enemy.

If you really cut out carbs totally, then you will die. But its hard to cut out carbs totally because carbs are in almost all foods.
