Whatever you like to do for entertainment- I bring my Kindle, loaded both with books, music, and movies, as well as a pair of earbuds and a charger. I usually bring a magazine or regular book, as well. That's enough to keep me entertained, even if there is no in-flight entertainment or it's not working (I tend to fly Norwegian internationally, which basically offers one channel in Norwegian and pay movies which never seem to work for me.) I make sure movies or TV shows are already downloaded on my Kindle so I don't have to worry about wifi.
I bring snacks and usually buy water air-side right before getting on the plane. Planes tend to be quite dry, so I make sure I have unscented lotion (scents can be overwhelming in a small, crowded space) and lip balm.
I get cold on planes, so I bring a sweater, and for longer flights, I bring a small lap blanket. I do like having a neck pillow with me, as well. I always bring a pair of socks because my feet get really cold.
Other than that, I pack any meds (prescription for the entire trip and OTC that I might need on the plane, like Benadryl since I have food allergies), a small notebook and pen, guidebook if I'm going somewhere new (love the Lonely Planet brand), extra battery pack to charge Kindle and phone, an extra set of clothing just in case my checked bag doesn't make it right away, toothbrush, toothpaste, deodorant, and face wipes if I'm on an overnight flight, eye drops, extra contacts, and whatever else I might need.

Water. The air in a plane is very dry. Also, be sure to get up and walk around every 2 or 3 hours. Look up "DVT flying"

Is it an international flight? If so, they will feed you. Most planes have back of seat entertainment units with movies and tv shows. Take some socks if you don't wear them anyway- you'll want to take your shoes off. Some people find neck pillows helpful- I don't. It's actually hard to read on a night flight because the lights are all out, and if you turn on your light, it disturbs other people.

Boredom is a problem on long flights. I'd bring a tablet and earbuds so I could entertain myself with stored movies or music. A tablet would also allow for writing and photography. Of course laptop would be good too, and a Chromebook would be very light.
Food can be pricey on an airplane. Sandwiches, trail mix, nuts, jerky, all would be good.
