Lad solder is not the ideal material with which to carry out such a repair. Take the damned thing to a good garage, and ask them to braze the repair.

Wow! Millions of houses with "soldered" copper pipes that have been used for a century and everyone is worried about a spot fix on a deep fryer?

Plumbing solder quite possibly has an acid core that acts as a flux to help clean the metal. NOT for food use! Also... If your "chip pan" is stainless steel, solder won't stick to it.

It needs to be welded, not soldered. Yes, the solder will melt when exposed to a heat source for more than a few minutes depending on the specific temperature.
