Lad solder is not the ideal material with which to carry out such a repair. Take the damned thing to a good garage, and ask them to braze the repair.

Wow! Millions of houses with "soldered" copper pipes that have been used for a century and everyone is worried about a spot fix on a deep fryer?

Fix it, wash it, use it!

Let's stop being so silly about this!

The oil will never get hot enough to melt solder, though it might SOFTEN the solder to let go. You need to either weld it or rivet it or screw it together or even wire it together using stainless steel wire...or buy another chip pan...this time look for a better built one.

Picture would have helped had you also included a picture of the problem

Plumbing solder melts at 350°F to 400°F -- which temperature you usually at cooking.

You can fix your basket with brazing.

Plumbing solder quite possibly has an acid core that acts as a flux to help clean the metal. NOT for food use! Also... If your "chip pan" is stainless steel, solder won't stick to it.

Most solders are not safe for use with food preparation. They tend to also have a low melting point.

There are solders safe for use in food preparation areas. They also tend to have a higher melting point well above what a typical soldering iron can produce.

My intuition says that if you don't know, then you shouldn't attempt it. Soldering is very dependent on the skill of the person soldering. With you not knowing which solder to use I doubt you have the skill.

It needs to be welded, not soldered. Yes, the solder will melt when exposed to a heat source for more than a few minutes depending on the specific temperature.
