Make sure your grill is clean … spray the grill with a spray oil .. make sure your fire on the grill is correct (not so hot to burn it).

Oil the fish, not the grill, because it will create a lot of smoke, Dont try to turn it too early or it 'will' stick to the grill.

I leave the skin on the fillet. I make a little tray out of foil and put a couple onion slices on it . Then I lay the fillet skin side down on top of that. A fillet can be cooked sunny side up if you put the grill lid down. No need to flip it.
This method works fine too if you're grilling a skinless fillet.

Leave the scales on, split the fish longways and grill with the scale side down.
