How do you keep fish from sticking to the grill?

Make sure your grill is clean … spray the grill with a spray oil .. make sure your fire on the grill is correct (not so hot to burn it).

Depends on what grill. Normally I clean my grills with shim stock or plaster laths. Wood. That groves to fit the grill rack. This leaves a oil film. I scale the fish, gut it, remove gills & blood vein. Unless fish steaks from larger fish. Those I slice 3/4th inch thick from the fish. Heat your grill first. Salt & spice body cavity of fish. Lightly oil fish skin. Lightly! Place on grill & cook fisy 1/2 way threw. The thickbody of the fish over the higher heat. Turn over once with wide sharp flat steel A old saw blade reshaped here works well with handle added. Edge sharp as a knife but only sharpened from 1 side. Turn fish over & cook other side. A lot has to do with the wide flat sharp turning tool as it needs slide under the skin & between the grill plate. 1 about 18 inchs wide & one about a meter wide depending on the fish you are cooking on the grill. So you cut it free in a way & turn it over. It needs cut on the grill side not the fish side. Larger fish we run a steel rod threw & open pit cook them. Those up over 25 kilo in weight.

Oil the fish, not the grill, because it will create a lot of smoke, Dont try to turn it too early or it 'will' stick to the grill.

stop playing with them till they have grilled long enough to develop a crust.

I leave the skin on the fillet. I make a little tray out of foil and put a couple onion slices on it . Then I lay the fillet skin side down on top of that. A fillet can be cooked sunny side up if you put the grill lid down. No need to flip it.
This method works fine too if you're grilling a skinless fillet.

I spray the grill with oil, or use some oil and rub the fish with it. You could also prepare the fish over a dmall sheet of aluminum foil
