How do you know when grilled fish is done?

That would depend entirely on what sort of fish it is? Skin on skin off? Oily fish, fresh water fish or even if its Shark which is sold in fish shops all over the world with lots of different names.

If you've been cooking fish for as long as I have you can tell by the way it 'feels'
when you press it with your ring and middle finger.
Otherwise, just 'gently' stick a fork into it and see if it 'flakes' easily.

I think it becomes flakey.

Color and texture changes, and when it easily flakes.
