Raw oysters start to degrade the second you remove them from the shell and are recommended to be eaten immeadiately. However they usually will not be any more hazardous to your health within 24 hours than they normally are. When in doubt, use your nose. If they do not smell like fresh sea water discard them and do not take the chance. Try to open them when you need them and remember that some oysters may be bad when you open them. Once again, use your nose.

NO! A week isn't that much time but the problem is that you threw out the expiration date which the fish monger probably exaggerated in the first place. I do not think getting violently ill and possibly dying a miserable dehydrated death is worth an oyster. Go buy more? If I bought them from Whole Foods I might consider eating them after a few days but never a week And that would have to be from a market where everything is guaranteed fresh. Chuck em in the bin dude.

As long as you keep them frozen. I wouldn't waste any time if they are thawed.
