    My cousin, a nurse, tells me that it is partly so that any stains will be readily noticeable...this aides in keeping down on cross-contamination.

    I agree with uknowit, but also by using Bleach the coat would be much cleaner. Colors would fade with time.

    Tradition. Also gives the appearance of cleanliness.
