How do I make a fried onion log, battered onion rings or French fried onions?

I LOVE onions and would like to make simple onion rings -- but the type where the batter does not fall off when I drop them in the oil (no problem if they peel off when I am eating them -- yummm!) I also have eaten the best onion logs on occasion out at restaurants. What about those great French fried onions that you can buy in the can with the pop-up top in the store? Thanks!

    Blooming Onion

    1 very large sweet onion

    1 egg

    1 cup milk

    1 cup flour

    1 1/2 tsp. salt

    1/2 tsp. black pepper

    1 1/2 tsp. cayenne pepper

    1/4 tsp. oregano

    1/8 tsp. thyme

    1/8 tsp. cumin

    oil for frying

    Dipping sauce:

    1/2 cup mayonnaise

    2 tsp. ketchup

    2 T. cream-style horseradish

    1/4 tsp. paprika

    1/4 tsp. salt

    1/8 tsp. oregano

    pepper to taste

    Beat together the egg and milk in a medium bowl. Combine the flour, salt, pepper, cayenne, oregano, thyme and cumin in a separate bowl. Slice 3/4" to 1" off the top and bottom of the onion and remove skin. Cut out a 1" core and slice about 3/4 of the way down to create petals. Place the onion in boiling water to separate the petals. Let cool. Dip the onion into the milk mixture. Dip the coated onion into the flour mixture, covering liberally. Repeat process. Let onion set in the refrigerator for 15 minutes before frying. Heat vegetable oil in a deep fryer or pot to 350 degrees. Fry the onion right side up for 10 minutes until brown. Drain on a rack or paper towel. Combine ingredients for dipping sauce and serve.

    Okay, there are several ways to do it. The key is the batter and what they soak in BEFORE you batter them. When I make my rings, I roll the onion lightly in flour, then dip it in buttermilk then roll it in flour again. Then I drop it into a deep fryer (Fry Daddy, etc.) If you roll it in a a little flour first, it seems to hold the batter better. You can do the same thing with onion sticks. Just cut the onion rings into quarters and they will come out like the canned ones.

    Oh, and the grease has to be the right temp or the batter will fall off. To test it, place a wooden spoon in the grease handle first (keep hold of the spoon part.) If bubbles start coming up around the handle, the grease is hot enough. Hope this helps.

    Come on guys, he needs an easy recipe and tips on how the batter won't fall off.

    You have to make the batter thicker, and the grease hotter for the batter to not fall off. Mix 50/50 Bisquick and corn meal for a good batter. The Bisquick has salt. Add a little black pepper if you like. Keep the rings dry so that the batter will stick. Drop them in very hot oil and deep fry them quickly. Of course ketchup is a must--ketchup makes the world go 'round.

    Fried Onion Rings Recipe

    Ingredients:

    large onions, sliced 1/4 inch thick

    salted ice water

    warm salted milk

    1/2 cup flour

    1/4 cup yellow corn meal

    2 Tablespoons sugar

    1/2 teaspoon Season-All

    1/2 teaspoon Accent (same as MSG)

    1/2 teaspoon salt

    1/8 teaspoon pepper

    Place the sliced onion rings in salted ice water for an hour (or more) Drain them and then soak them in the warm salted milk for another hour. Mix the rest of the ingredients in a bowl. Roll the onions in this flour mixture until they are well coated and deep fry until golden brown! These onion rings come out nice and crisp! I love onions and this is a great onion ring recipe.
