I did not know the Assyrians came up with the idea for baklava. I absolutely adore it! Just today I was talking about how fabulous a piece of baklava is with a small glass of Turkish coffee - YUM. And, if I may say so myself, I make a killer hummus.

Mix squashed chickpeas with some tahini. Put a little olive oil on top.

Many to choose from. Go to www.epicurious.com and search "hummus" or "chickpeas" and see how many you get. Choose one that looks simple, and then have fun!

Buy canned chick peas, drain, and crush into paste, season to taste with your choice of spices.

    canned chickpeas (garbanzo beans)

    garlic

    olive oil

    lemon juice

    tahini (sesame paste)

puree in blender 'til smooth ... you can add cumin and cayenne, too ... fiddle with it and make it your own ... try dipping veggies instead of bread (carrots, cucumber, red peppers, etc.)
