the definition of menudo is a soup that uses intestines in place of meat. the common intestine is beef tripe (stomach). some often confuse posole with menudo but posole does not use intestine. you can add meat to menudo if you like, small chunks of stew meat added are my preferance. menudo = tripe soup, res = beef

Si! Pork belly, which can be purchased on the canned meat aisle. Look for the word "tripe" on the can. Believe it or not, this was a favorite in the southern states as a battered and deep fried entree, much like fried chicken.

the stomach and believe me, if you are starting from scratch, you had better be prepared to do some seious cleaning, because it is very difficult to get clean.
