There is a panel of dogs that are used to test the food.....
It is a real test just like with humans and there are certain criteria set by the dog food manufacturers that are looking to be met with the dogs reactions to the food. Reactions include anticipation and excitement at specified and designated meal times, whether the dog eats at all or refuses to eat, and of course the reaction that the dog has in it's excrement.

seriously!! I want to know, too! And if the dogs are testing the dog food, how are they communicating their preferences to the persons taking the test? I am baffled.

There are actually people (in europe that I know for sure) who get paid to test animal food to see if it really "tastes like chicken" or "tastes like beef"

Dogs, but most companies that advertise for this keep dogs that are in unsanitary conditions and have inhumane tests done on them.
