How do crabs and lobsters live for long periods of time out of the water?

Crabs and especially lobsters can live for long periods of time after removed from the sea. Lobsters even survive periods of time as long as 12 hours even when refridgerated. What type of breathing, as opposed to a fish's gills, makes this possible?

    aside from gills, they also have lungs.

    Lobsters are air breathing animals – they’re not fish! Therefore they must be kept in an oxygen rich environment at all times, or else they will drown.

    Lobsters can live up to 10 days out of the water.
