London Broil is an inexpensive cut of meat that is exceptionally lean in it's interior but usually has a large fat cap. As with most very lean cuts it is a tough piece of meat when cooked quickly and cut up like most steaks. Yhe old adage tough cut cooks slow, tender cuts cook quick doesn't apply here however.

My favorite way to prepar a London Broil is to get the BBQ as hot as possible and cook the LB one one side then turn over and cook the other side. A very thick one can take 8 or 10 minutes per side.

Once cooked place on carving board and let rest for at least 5 minutes. Carve thinly and across the grain, reserve juices and pour over slices on serving plate.

Serve with green salad with tomatoe wedges, fresh Italian or French bread slices.

Ice Tea with Lemon, COLD Beer or a good merlot all work well with this.

Season both sides liberally with salt and pepper. Then either broil or grill it. A 1 inch steak will cook to medium rare in about 7 minutes per side. After it's cooked, let it sit on your cutting board for 5 - 10 minutes so it will absorb its juices rather than spill out all over the cutting board when you slice it. Slice very thinly on the diagonal. London Broil is flavorful but a tough cut of meat, which is why you serve it sliced thinly.

I have cooked it 2 ways actually...the one I like least (but my mother loves) is to slowly cook it in the slow cooker for a few hours until its nice and tender, maybe add a few vegetables in it and some aples during cooking...just remember not to take the skin off the apples otherwise they will fall apart and turn into apple mush during the cooking. My favorite way and the way I sometimes find it in the grocery store is with montreal seasoning. Also, if your grocery store doesn't already have the steak preseasoned like mine sometimes does I'm sure you can find the montreal steak seasoning down the spice section of the store. Just a warning.....with the spicy montreal seasoning and the one that isn't spicy...the spicy is definitely very hot, but both are very salty so use very little of the spice or you won't be able to eat that beautiful steak you just spent all that time cooking...If done right, though, the steak can taste great this way.
