What is an easy recipe that I can use to make dinner tonight?

I want to cook something nice, no salads (boyfriend hates veggies) and no pork (I don't dig on swine) please!!

    Fish Tacos

    Fish

    3/4-pund Halibut Fillet, suitable for grilling

    Marinate 1 hour in:

    Salt, Chili Powder, Chopped Cilantro Chopped Green Onion, juice of 1 small Lime, and Olive Oil

    Guacamole

    1 avocado, coarsely mashed, salt, chopped scallion, juice of 1/2 small lime, chipotle chili powder

    Taco Sauce

    1/2 cup non-fat yogurt, 1/4 cup reduced-fat mayonnaise, chopped cilantro, 1 clove garlic, 2 green onions, juice of 1 lime, 1 tbs (heaping) honey red pepper flakes, salt

    Blend until smooth.

    Condiments

    Butter Lettuce cups, black beans, thinly sliced cabbage chopped green onion and cilantro, shredded reduced calorie Monterey Jack cheese, lime wedges

    Asian Peanut Noodles

    1 pkg Angelhair Pasta

    Soy sauce

    Chunky peanut butter

    Fresh Cilantro

    Juice on 1 small lime

    Crushed peanuts

    Seasame seeds

    Boil angelhair pasta, then strain and put in fridge. mix soy sauce, chunky peanut butter, fresh cilantro, lime juice, crushed peanuts, and seasame seeds. I do not know exact measurements, so experiment with the sauce for a while. Take out pasta (does not have to be cold) and mix with sauce. put back into fridge to cool. serve chilled topped with fresh bean sprouts

    Top Of The Stove

    16 ounces Egg Noodles

    1 1/2 pounds Ground beef

    1 cup Chopped onion

    2 cans Cambell's cream of mushroom soup

    1 cup Sour cream

    1 teaspoon Italian seasoning (optional)

    1 1/2 cup cheddar cheese (optional)

    Cook noodles in boiling water for 20 minutes or until tender. Drain and keep warm.

    2. While noodles cook,brown ground beef and onions.Drain off excess fat.

    3. Combine ground beef mixture,soups, sour cream, Cheddar cheese and Italian seasoning in large saucepan.Simmer for 10 minutes,stirring frequently,(do not boil).

    4. Serve over warm noodles

    Beef Noodles

    Cook 1 bag of Egg Noodles. Prepare Beef Tips w/ chopped onions & garlic in a pan on top of stove. When the Beef Tips are cooked through add to Egg Noodles. Add 2 cans of Beef gravy/Brown Gravy. Quick & Simple! Very Good! You can also add a container of Sour Cream thats also good.

    Get some thin steak. Make some Stove Top stuffing. Pound the steak very thin. Put some stuffing at the end of the steak and roll. Secure with toothpicks. Brown the rolled steaks in some vegetable oil to brown lightly. Put in a casserole, add a can of beef stock. Bake low, around 300 degrees until tender. I like to put them in the crockpot but if you want to eat them tonight, then cook them in the oven.

    CHICKEN TOSTADAS ♥

    4 large flour tortillas

    1/2 cup canned refried beans

    1/2 cup salsa

    3/4 lb. roasted chicken meat, chopped

    4 green onions, chopped

    1 cup fat-free cheddar cheese

    1/2 cup nonfat sour cream

    2 cups lettuce, shredded

    2 medium tomatoes, chopped

    Turn on broiler. Arrange tortillas on a cookie sheet. Spread refried beans over tortillas. Add salsa, then layer with chicken, onions, and cheese. Place cookie sheet under broiler 1-2 minutes or until the cheese melts and the tortillas are crisp. Serve topped with sour cream, lettuce and tomatoes

    Chicken Lasagna

    2 cups shredded mozzarella cheese

    2 cans (10 3/4 ounces each) cream of mushroom soup

    1 1/2 cups milk

    1 package (10 ounces) frozen chopped spinach, thawed, drained, and squeezed to remove water

    1 egg

    2 cups ricotta cheese

    12 lasagna noodles, cooked and drained

    2 to 3 cups diced cooked chicken (chicken breasts or cooked whole chicken)

    Parmesan cheese

    PREPARATION:

    Reserve 1/2 cup of Mozzarella cheese for topping. In medium bowl, combine soup and milk; set aside.

    In another medium bowl, combine spinach, egg and ricotta; mix well.

    In bottom of 13x9-inch baking dish, spread 1/2 cup of soup mixture. Arrange 4 lasagna noodles on mixture. Spoon about half of the ricotta cheese mixture over noodles, half of the chicken, 3/4 cup of Mozzarella cheese, and 1/3 of remaining soup mixture. Repeat layers, with 4 lasagna noodles, remaining ricotta mixture, remaining chicken, another 3/4 cup Mozzarella cheese, and half of remaining soup mixture, Top with remaining noodles, remaining soup mixture, reserved 1/2 cup Mozzarella cheese, and a generous sprinkling of Parmesan cheese.

    Bake at 350° for 40 minutes or until hot and bubbly. Let stand 15 minutes before serving.

    Makes 6 to 8 servings.
