i've seen the recipe online for Ribs that they use, but i cant find it. if anyone knows of it, please let me know.

I haven't had their ribs but I've had their Possum and Sweet Potato Casserole and I found the recipe online.
Here it is:
Possum & Sweet Potato Casserole
1 lb. possum meat (cubed)
12 rashers of bacon
1 can sliced mushroom
1 cup chopped onion
1 can tomato soup
1 can tomatoes
2 tbsp brown sugar
3 tbsp. ketchup
2 large green/red bell peppers chopped
8 sweet potatoes
2 tbsp butter
3 tbsp brown sugar
salt and spices to taste
Preheat oven to 350F
Boil sweet potatoes until tender in lightly salted water and mash together with the butter and sugar. Set aside.
Cut bacon into bite-size pieces and cook in a large skillet.
Remove bacon from fat and sear possum pieces in bacon fat.
Place seared possum into casserole dish. Place all other ingredients (except sweet potato mixture) into the skillet and bring to a boil. Add to possum cubes and stir.
Cook for 1 hour.
Top with sweet potato mixture, brush lightly with butter and broil until potato is browned
Opossum hints and tips:
Clean the possum as soon as possible after killing.
Hang it for 48 hours in a cool place before skinning and cooking.
Possum should be boiled in rapidly boiling water for 3 minutes to loosen the fur.
This makes it easy to skin.
