How to spice up a vanilla cake...?
So, tomorrow is July 4th and I have a potluck to go to. Im on the dessert list and I dont want to buy anything but I have vanilla cake mix in my pantry and cream cheese frosting. But its kinda plain and too white. I dont want to add food coloring to the batter but, hows a way I can spice up the taste? I was thinking of adding cinnamon or something. What do you think?

spice up? as in spices? cinnamon, nutmeg or a blend of both.
i would suggest adding some flavoured extracts or fruit juices to flavour it. (ie: lemon juice, orange juice, orange extract, mint extract, coconut extract, cherry extract, etc..)

Maybe you should try a different type of frosting like if your undecided put half the cake vanilla and the other half chocolate frosting sort of like a black & white cake to spice the cake you should put mabe some vanilla extract or nutmeg look online for some cake recipes do a yahoo search. Or do a red, white, and blue sort of thing by decorating the top with strawberries and blueberries and vanilla frosting of course you should cut up the strawberries.

What about a red, white and blue layer cake?
Make the white cake mix in two cake pan.
Once cooled carefully slice each layer in half.
Between every other layer use strawberry (or raspberry jam),
and for the "Blue" layer Blueberry jam.(Be sure to rim the outside of each layer with vanilla frosting to keep the jam inside)
You can frost the cake white and on top add fresh strawberries and blueberries. Have fun. Enjoy

Make it a jello cake...after mixing the cake mix add a half a box of any flavored jello and to instead of water add buttermilk it, takes away the box cake taste of the cake. Then when making the cream cheese frosting add the rest of the pack of jello along with the powdered sugar and then add a 1/2 teaspoon of almond extract.

Make a glaze by combining 1 part coconut milk with 1 part sweetened condensed milk. Then drizzle the glaze over the slices just before serving and add a dallop of whipped cream and a cherry.
(You can find canned coconut milk in the exotic or foreign section of the grocery store, or by the mixed drink section.)

You can add something to the batter like chocolate chips. (or you could put them on top.) Or you can use fruit juice instead of water to add some flavor. Apricot or strawberry nector work especially well for this and the strawberry nectar would turn your cake pink. Then you could decorate the top with strawberries and blueberries!

Cinnamon would be a wonderful addition, as well as a little nutmeg or allspice. if you're worried about appearances, add coloring to the frosting, or buy chocolate frosting, or add candy or something colorful to it. Good luck!

I think you should make a POKE CAKE. You probably have a box of flavored jello in your pantry already. And still make cream cheese frosting:
