What is the best way overland or by water way to go from Hong Kong to Hanoi?
It seems pretty expensive to fly because they are international flights but I'm sure there must be another way :)

Flying is the fastest and most convenient way.
If you choose to go by train, take a train to Guangzhou from HK. Then you can change to a train to Kunming which continues to Hanoi.
It takes 2-3 days.

You can get a boat to Vietnam from Hong Kong but its a slow and expensive way to go taking 2-3 days.
Hanoi and Ho Chi Min are only 1hour 30 mins flight from Hong Kong, cheaper if you fly via Bangkok then Bangkok Air, vietnam airlines, or Thai airways to Hanoi.
