What are some good diet recipes?

My husband is on a diet and I need some low-fat. low-cal recipes for dinner ideas. We're getting a little tired of salads!

    I'm on the Mayo Clinic Healthy Weight for Everybody and I like their recipes. I only have to change the ingredients occssionally and my husband (meat and potatoes kind of guy) and two teens (boy & girl) like them too. We're still trying to get used to the "brown rice" and "whole wheat" speghetti and bread but I mix them with the enriched stuff and will eventually get to all whole-wheat.

    I found it helpful to change my salads....add some fruit or different types of lettuce. I usually buy the salad in a bag kind because it's quicker but occassionally I buy the different lettuces and make one from scratch. I try to have different ingredients in the salad every few nights so we're not eating the same "kind" of salad everyday. Pineapple, apples, and Mandarin oranges are really good in salads. Instead of salad, slice tomatoes and cucumbers and drizzle with Balasmic vinegar or you could just have some baby carrots, celery, and cauliflower.

    Kimchi, a korean food that is high in minerals and vitamins.

    (it'll be better if the vegetables were organic)

    1 Napa cabbage

    3 Carrots

    2 Cucumbers

    3 Heads broccoli

    2 Bunches scallions

    1 Apple

    2 Small oranges

    1 Lemon

    Unrefined rice vinegar

    Unrefined sesame oil

    Kosher salt (or sea salt)

    Crushed red pepper (coarse)

    Crushed garlic

    Sesame seeds

    (Roasted more flavorful.

    Raw may be healthier.)

    Utensils:

    Cooking tools

    Large mixing bowl

    Small mixing bowl

    Cutting board

    Cutting knife

    Directions:

    Rinse all vegetables in water and salt.

    Cut out stem of cabbage with a V-notch, then cut in half lengthwise. Cut each half lengthwise once again, and slice crosswise into strips.

    Cut up the cabbage stem into thin strips.

    Sprinkle with Kosher salt. Scoop and stir with hands.

    Let cabbage sit while peeling carrots and cucumber. Peel carrots completely. Take strips from the cucumbers.

    Section the carrots and cut into thin strips.

    Section the cucumbers and cut into thin strips.

    Cut broccoli heads into byte-size pieces, cut stalks diagonally to make thin oval slices.

    Add salt. Scoop and stir.

    Trim scallions, slice the white part down the center, then cut into strips diagonally.

    Core and dice the apple and add.

    Skin the oranges and lemon.

    Slice the oranges, separate into pieces, and add.

    Put chilli pepper, sesame seeds, and crushed garlic in a sauce bowl.

    Add sesame oil and rice vinegar.

    Dice the lemon and squeeze into the bowl, add the remaining pieces.

    Mix the ingredients in the sauce bowl to make paste, then gently spread the paste into the vegetable bowl.

    Drink lots of water, walk an hour every day except 1 then do stretching and upper body toning. Eat fruits & vegetables.

    No sugar

    No sodas

    No candy

    No chips

    No potatoes

    No pasta

    No pizza

    no corn

    no bread

    no burgers

    no fried foods

    This isn't a full dinner but try having vegetable smoothies made with cucumber, soy yogurt, tomato, spinach and a little onion and worcestershire sauce. Sounds gross but it is really very good when made with fresh ingredients.

    Legumes are excellent even tho they contain relatively high fat levels they are packed with protein and essential nutrients.
