Why is the US Govt's definition of "Caucasians" different from others?

The way the US and other governments define race is constantly changing because race is just an arbitrary way of dividing up people. Jewish people used to not be considered white for a while in the US. Simply put, race is a social construction rather than a biological one. Everyone has a genotype (their DNA) and a phenotype (how those genes are expressed). Your skin color is a just a very small portion of your genotype. So it is possible that I (being 'white') could have a genotype that more closely resembles your genotype than that of another 'white' guy. So the way the U.S. and other governments define race has to do with social history.

Actually, the US Government doesn't define ethnic groupings. Anyone can select any category they want, there is no way for the government to argue with you. You might technically fit best under the "Asian and Pacific Islander" category, but there's no way that the gov't can stop you from choosing Black or White if you wanted to.

I'm not familiar with your use of caucasian. In the USA and Western Europe, caucasian = white. North Africans (like Arabs) are semitic peoples. Indians from India are Asian (south asian) even though they speak an Indo European language closer to English than to, say, chinese. The caucasus is a very small area and bears almost no relation to the modern usage of the term Caucasian.

Ofttimes this is in the eye of the beholder. Race and ten cents will not buy you a cup of coffee in America.

I could tell you stories that are insane about this nebulous thing called race. Be happy for who and what you are as a human being.

If you are from India then you may or maynot recall that the English who was your colonial power called you "black" and other names that were not making you "caucasian" like them. Check your history.

It's worked well for us all these years, I see no reason to change it. You many have noticed that we pretty much dance to our own drum beat in this country. That's just the way it is.

Just so you know Indians do have Mongolian back ground. And US does it to justify themselves so that they can point fingers at others and say "you immigrants"
